Ekta Ankit Mehta on Jain Vegan Food, Ahimsa, and AI

The Parkland, Florida creator behind Ekta's Jain Vegan Rasoi on food as a vehicle for compassion, and why a story has to come before the recipe.

Ekta Ankit Mehta is the founder and creator of Ekta’s Jain Vegan Rasoi, a digital food and storytelling platform rooted in Jain values, veganism, Ahimsa, compassion, and respect for all living beings. Based in Parkland, Florida, she combines Jain vegan cuisine, cultural storytelling, and AI-assisted visual content to bring compassionate food and old values to a modern audience.

She is also the author of Veganism: The Art of Compassionate Living, and she shares her recipes on YouTube and Facebook. Like Ella Madatyan, who took her family’s bakery and made Armenian pastry contemporary, Mehta is building on a tradition without freezing it in place.

Tell us about Ekta’s Jain Vegan Rasoi. How did you come up with the idea?

Ekta Ankit Mehta: Ekta’s Jain Vegan Rasoi grew from my deep connection to Jainism, Ahimsa, compassion, and veganism. Jainism has taught me the importance of non-violence, kindness, self-discipline, truthfulness, and respect for all living beings.

My journey toward veganism was inspired by my mother, who helped me understand compassionate choices around food and living. I’m also deeply grateful to my Guru, Shrimad Rajchandraji, whose teachings of Ahimsa and compassion continue to guide me.

My husband and son have been my biggest sources of love, encouragement, and support. My son’s commitment to veganism from a young age especially inspired me to explore more vegan possibilities and create new recipes.

I wanted to create a platform where food could become a way to share these values while also being creative, joyful, modern, and accessible. That vision became Ekta’s Jain Vegan Rasoi.

How did you promote it in the early days?

Ekta Ankit Mehta: In the beginning, I focused on creating and sharing content consistently on social media and building my audience organically. I experimented with recipes, food presentation, storytelling, and different ways of presenting Jain vegan cuisine.

I learned by creating. I paid attention to what made people curious, what encouraged them to watch a recipe, and what helped communicate an idea quickly through visual content.

My focus was not simply on promoting a brand, but on building a genuine identity around Jain vegan food, compassion, creativity, and storytelling.

How have you grown the platform?

Ekta Ankit Mehta: I keep experimenting with original recipes, familiar-food transformations, short-form videos, and visually engaging storytelling.

An important part of my growth has been learning to combine tradition with modern digital tools. I use AI-assisted visual storytelling to explore recipe concepts and create new ways to present food, while keeping the values and creative direction human-led.

I also focus on content that is easy to understand, visually appealing, and connected to a clear story. Most importantly, I keep learning from my audience and adapting my content while staying true to the purpose behind the platform.

What are your secrets to content that people actually watch?

Ekta Ankit Mehta: It starts with making the viewer curious within the first few seconds.

I focus on a strong visual opening, recognizable foods or interesting transformations, simple explanations, satisfying food moments, and a clear payoff. Short-form content needs to communicate quickly while still giving viewers a reason to stay until the end.

Consistency and experimentation matter too. There is no single formula for every piece of content, so I keep testing different recipes, presentations, storytelling styles, and visual approaches.

My goal is not simply to chase virality. I want the content to attract attention while still communicating the values and creativity behind Jain vegan food.

Teach us something we don’t know about social media.

Ekta Ankit Mehta: People often connect with a story before they connect with a recipe.

A recipe becomes much more meaningful when viewers understand why it exists, where the inspiration came from, or what value it represents. On my platform, I connect the visual appeal of food with a larger message: Jain values, Ahimsa, veganism, compassion, family inspiration, or cultural storytelling.

Creators should ask not only, “How can I get someone to watch this?” but also, “What do I want them to feel, understand, or remember after watching?”

What do you do better than most people?

Ekta Ankit Mehta: I bring together things that may seem very different — Jain philosophy, vegan food, creativity, cultural storytelling, and AI-assisted technology — and turn them into one visual story.

I can do this because my work comes from a personal connection to these values. I’m not creating content around a trend; I’m building from my own experiences, family influences, cultural values, and creative curiosity.

I also enjoy experimenting. I’m willing to try new recipes, new formats, new technologies, and new ways of communicating traditional ideas while keeping their meaning at the center.

What are some of the best books you’ve read?

Ekta Ankit Mehta: Books and teachings connected to Jain philosophy and compassionate living have had a meaningful influence on me, because they encourage reflection on Ahimsa, self-discipline, compassion, and respect for life.

My own book, Veganism: The Art of Compassionate Living, reflects many of the ideas that have shaped my journey. I’m especially drawn to books that encourage personal growth, compassion, spirituality, creativity, and living with greater awareness.

What role has gratitude played in your journey?

Ekta Ankit Mehta: Gratitude has been at the heart of it.

I’m deeply grateful to my Guru, Shrimad Rajchandraji, whose teachings guide me, and to my mother, who inspired my journey toward veganism and shaped my understanding of compassionate living.

I’m equally grateful to my husband and son, my biggest support system. My son’s commitment to veganism inspired me to create more vegan possibilities, and my husband has consistently encouraged my ideas and supported my creative journey. My family’s love helped me turn a personal passion into a platform with a larger purpose.

Where do you see yourself in a couple of years? What’s the dream?

Ekta Ankit Mehta: My dream is to grow Ekta’s Jain Vegan Rasoi into a recognized global platform for Jain vegan food, compassionate living, and digital food storytelling.

I want to introduce more people around the world to Jain vegan cuisine and the timeless principles of Ahimsa, compassion, kindness, and respect for all living beings. I see the platform evolving through original recipes, cultural storytelling, creative digital content, and AI-assisted visualization — showing that ancient values and modern technology can come together without losing the heart of the tradition.

Most importantly, I want it to become a meaningful community where people can discover compassionate food, learn about Jain values, and see how creativity can give timeless ideas a new voice.
